Fruit Pizza

A great dessert for children to make  in the summer.

A brilliant way to use any fruit you have grown

Serves: 2 × 20 cm diameter pizza or 1 large pizza

Ingredients

Shortbread base

  • 180 g (6 oz) plain flour, sieved
  • 120 g (4 oz) butter
  • 55 g (2 oz) golden caster sugar

Pizza topping

  • 250 g mascarpone
  • 50 g icing sugar
  • Fruit

Method

  1. Preheat the oven to 180◦C
  2. Cream the butter and sugar together until combined and the butter is soft.
  3. Add the flour slowly and combine until the mixture turns into a soft dough.
  4. Roll out the mixture to fit a 20 cm diameter circular base (the mixture will make 2 thin base pizzas of this size) or a large round pizza tray (maximum depth of dough 1 cm).  Place onto the tray and refrigerate for about 15 minutes
  5. Place in the oven and bake for 12-15 minutes (this will depend on size of pizza base and thickness) remove from the oven when a nice golden colour and leave to cool on a wire rack.
  6. Whilst cooling, place the mascarpone in a bowl and lightly beat, add the icing sugar and incorporate into the mascarpone. Place in the fridge whilst the fruit is being chopped
  7. Wash and cut the fruit that you wish to top your pizza
  8. Top the shortbread base with the sweetened mascarpone and top with fruit toppings
  9. Get the children to create a rainbow of colours on the pizza
