Banana and Chocolate Chunk Muffins

Serves: Makes 12

Ingredients

  • 1 tbsp Fairtrade cocoa powder
  • 1 tbsp warm water
  • 100g butter, melted
  • 2 eggs
  • 140g Greek yoghurt
  • 225g self-raising flour
  • 1 tsp baking powder
  • ½ tsp bicarbonate of soda
  • 175g golden caster sugar
  • 2 Fairtrade bananas, ripened and mashed
  • 1 tbsp milk
  • 80 g Fairtrade plain chocolate, chopped into chunks

Method

Preheat the oven to 180C/160C Fan/Gas 4.

Line a muffin tray with 12 paper cases.

In a large bowl mix together the cocoa powder and the warm water to form a paste.

In a small saucepan melt the butter, allow to cool slightly then add to the cocoa paste. Stir in the beaten eggs and the yoghurt and mix.

When all combined you then add the dry ingredients into the wet ingredients. Sift the flour with the baking powder and bicarbonate of soda into the liquid ingredients, add the sugar and fold in until just amalgamated, do not overwork.

Mash the bananas in a bowl and add to the mixture, gently mix. If the consistency is a little thick add 1 tablespoon of milk to loosen the mixture.

Add the chunks of plain chocolate and incorporate into the batter.

Spoon the mixture into the muffin cases.

Bake for 25 minutes until risen, golden and just firm to the touch.
