Coronation Chickpea Salad
Ingredients
- 2 tbsp mayonnaise
- 1 tbsp mango chutney
- 100 g sultanas
- 1 tbsp mild curry powder
- 1 tin of chickpeas, drained and rinsed
- Salad leaves, chopped cucumber, green pepper – suitable quantity for the number of diners
- Red onion, finely chopped
- Flaked almonds for garnish/coriander (fresh or frozen)
Method
Mix the mayonnaise, mango chutney, sultanas and curry powder in a bowl until well distributed.
Toss the chickpeas into the mayonnaise mixture and gently mix.
Serve in bowls or on a deep plate with plenty of the mixed salad and onions, with the chickpea salad in the middle.
Garnish with coriander or flaked almonds.
